But I encourage you to try these pastrami wraps without the bread. I feel passionately about helping people eat more vegetables. This is the perfect time to try it! Since you're going to eat with your hands anyway, get in there and make some lettuce wraps. If your lettuce leaves are pretty small like mine, you will end up making about twice as many lettuce wraps as you would with bigger bread wraps.
Pastrami Cups
serves 2 as a main dish or 4 as an appetizer
lettuce leaves
100 g pastrami, sliced
1/4 c (25 g) grated cheese
1 yellow bell pepper, sliced
1 recipe cherry tomato salsa (see below)
Make the cups by topping the lettuce leaves with all the other ingredients.
Eat with your hands.
Cherry Tomato Salsa
makes 2 cups
2 c sliced cherry tomatoes
1/2 lime, juiced
1 T sliced scallions
1 T sliced mint leaves
Mix all the ingredients in a bowl.
Let sit at room temperature for 20 minutes to allow the flavours to meld.
