ginger and peach muffins (whole grain baking)


I think peaches may be my favourite summer fruit. And summer is the perfect time for eating juicy peaches in every way possible! How about these ginger and peach muffins? They are made with oat flour and whole wheat flour.

I used the recipe from White on Rice Couple's adaption of a recipe from the cookbook Good to the Grain by Kim Boyle. My version is the same, just smaller so that I can enjoy more muffins! I made 12 medium muffins instead of 9 big ones.

Oh, Tina! It's worth trying ginger with almost any fruit. it goes well with mangoes, peaches, and apples, for example.
They look so goooood! I love plums, my favorite.
