Baked Fish Fillets with Tomatoes
Last weekend was spent organising our new flat. It feels so good to have all the boxes gone now. (Except four that I have been avoiding sorting through.) Our new bookshelves are full; the cookbooks have a shelf all to themselves.
I am really pleased with the living room. We bought a high pile rug that feels great underfoot. And we got new plants. And we hung our painting up. For me, these are the things that make it a home. The picture below also includes a husband resting on the couch.
The best part is my (first ever) pantry. Wow, look at all that storage! Amazing. There are still several baskets empty. What can I put in them? Oh, the possibilities!
This week's Wednesdays with Donna Hay recipe is the kind of easy thing you can make in between doing chores, like unpacking boxes, doing laundry, or scanning files. First, bake the tomatoes for 20 minutes with olive oil, capers, and lemon juice. Then add some fish fillets and bake for 20 minutes more. And after the unpacking is done, dinner is served.
