poached egg for lunch

December's Daring Cooks challenge is a perfect one for me. Jenn and Jill have challenged The Daring Cooks to learn to perfect the technique of poaching an egg. My favourite lunch is some sort of veggies accompanied by some sort of egg. And poaching the perfect egg is a skill I have relished learning. Together with some green bean and leek veggie pancakes, I had a perfect lunch.

Poaching an egg is seen as difficult but only takes a couple of tries to be an expert. (Here's my method.) Thanks to Jenn and Jill for highlighting this important, and easy, skill. Once you know how to poach an egg, what can you do with it? I mean, besides eating it on top of veggie pancakes?
--impress your family or dinner guests with oeufs vert-pre (eggs with baked potatoes and spinach, baked with cheese on top)
--enjoy a weekend breakfast of eggs Benedict (an English muffin with bacon, a poached egg, and Hollandaise sauce)
--greens with a poached egg and toast are a simple meal for a busy day
--make a big salad for a weeknight dinner by mixing grains, veggies, and an egg

And how do you like your eggs?

Jenn, thanks for a great challenge.

Renata and Please Do Not Feed The Animals, potatoes, spinach, and cheese are so comforting, and with the creamy egg in there, it's like heaven on a plate. :) A lovely, homey dinner. Enjoy.

That looks like the perfect poached egg, nicely done! BTW, if you can make yogurt at home yourself, go for it and save your money. The machine is the only way I would do it and I'm already planning on making more tomorrow so it works for me.

Suzie, thanks for visiting. I guess the key is that we are both making yogurt at home and loving it! :)
