I have two main dinner strategies when time is tight and inspiration is waning:
1. The "all in one" strategy: Make a hearty salad-ish dish, warm or cold, with lots of veggies and maybe a bit of meat (for example, the peach and pumpkin salad or aubergine with black eyed beans).
2. The "side as main" strategy: Make a big amount of my current favourite side dish and make it into a meal by adding a piece of meat or fish on the side (for example, veggie pancakes or a warm black cabbage salad).
This recipe falls into the latter catergory. This easy side dish can easily turn into a main since it has a bit of bacon to add a smoky flavour. We enjoyed it with a piece of grilled cod, which was topped with a little white cheese sauce.
Bacon-Fried Greens
adapted from Rachel Ray: 30 Minute Get Real Meals
serves 2 as a side dish
1 T olive oil
2 slices back bacon, chopped
1 medium onion, chopped finely
3 T vinegar
3 c (3 double handfuls) Swiss chard, kale, or any other green, such as bok choy, washed and still dripping
salt and pepper
Heal oil in a frying pan and fry bacon for 3 minutes. Add onion and fry for a further 3 minutes.
Deglaze the pan with the vinegar, scraping the bottom and sides for a minute.
Add the greens to wilt.
Remove from heat and season with salt and pepper.
What are your failsafe dinner strategies? Any gems of ideas to share?
