Cranberry and Walnut Muffins



Here are four things that make me feel Christmassy:

1. listening to Christmas carols while cooking
2. singing along to Christmas carols
3. the smell of baking muffins with cranberries and orange
4. my fingers around a mug of steaming spiced tea



I think we should all welcome advent and look forward to Christmas with these cranberry and orange muffins. What could make you feel more Christmassy?

Cranberry and Walnut Muffins
makes 16 small muffins
adapted from Simply in Season

1 2/3 c (200 g) whole wheat flour
1/3 c (40 g) plain flour
1 1/2 t baking powder
1/2 t baking soda
1/4 t salt
1 egg
1/3 c (80 g) sugar
3/4 c (190 ml) orange juice
1/4 c (60 ml) water
1/4 c (60 ml) vegetable oil
1 t vanilla extract
1 1/2 c (150 g) cranberries, fresh or frozen (not thawed)
1/2 c (60 g) chopped walnuts

In a large bowl, mix together the flours, baking powder, baking soda, and salt.
In a medium bowl, mix together the egg, sugar, orange juice, water, oil, and vanilla extract.
Add the wet ingredients to the dry ingredients. Add the cranberries and walnuts.
Stir only until combined.

Spoon into muffin cups, filling to the top.
Bake at 350 F (180 C) for 20-25 minutes, until a tester comes out clean.
Let cool in the pans for five minutes, then remove to a wire rack to cool completely.

They look beautiful Sarah. So appealing, they just scream pick me up and eat me. They might be a good entry for No Croutons Required - Festive photos. They look very festive indeed. Adding them to my 'to try' list.

These sound wonderful! My son loves cranberries and has been begging me to make muffins for weeks so I think these would be a perfect project to share this weekend!
cranberries and walnuts are such a great combination. I love that this recipe is also low in sugar and is so natural. I;m pinning this for future.
