Bean Sprout Salad


Bean sprouts - not the sexiest of vegetables. In fact I find them kind of unpleasant. But I learned a new method of preparing them and I was mighty impressed. Blanch them - a brief dip in boiling water made them silky! I was amazed at how much more palatable, enjoyable, even, the sprouts became.


Serve these bean sprouts as a side dish to your favourite stir fry. Perhaps they are still not sexy, but now bean sprouts can at least be tasty!

Bean Sprout Salad
adapted from Simple Chinese Cooking by Kylie Kwong
serves 4 as a side dish

The trick here is to blanch the bean sprouts before tossing them with a simple dressing.

500 g bean sprouts
2 T soy sauce
1 t sugar
1 large green chilli pepper, sliced
1/2 t sesame oil
1 T peanut oil

Bring a large saucepan of water to the boil.
Blanch the bean sprouts (possibly working batches depending on the size of your pan) for 30 seconds.
Remove and drain well.

Mix the soy sauce, sugar, green chilli pepper, and sesame oil in a small bowl.
Put the peanut oil in the still hot, but empty (and off the heat) saucepan for a minute to become hot. Then pour the peanut oil into the dressing and mix well.
Toss with the bean sprouts.

Good to know! In our house we are on the obligatory "Trying to Eat Healthier" in the new year kick, so this could be a good addition to the mix!

Thanks for visiting! Bean sprouts are underrated, I have decided. This may sound bizarre, but I like the "trying to be healthy" feeling that the new year brings. (As long I it doesn't become an issue of guilt.) I just really like the way my body feels better when I feed it clean food. Let me know how your healthy food journey goes.
Yum! Ok, you have inspired me to try these. I've only had them raw and they are nt only gnarly looking but they don't taste all that pleasant by themselves. The added cooking ingredients actually make them sound tasty!

I grow my own sprouts (soooo easy!!!). After blanching or steaming, don't throw the liquid away! Drink it like hot tea. It contains nutrients that you don't want to pour down the drain! We actually fight over who gets the tea at our house...hehehe.

Wow, for the newly-converted sprout-eater (that is, me), that sounds a little scary. What does it taste like? Maybe it is very milk since the sprouts are only in the water for half a minute? Maybe you could make it into real tea?
I don't salt the water so it's not salty. The taste is light and pleasant. The only way you'll know is to try it. It's definitely good for you! After blanching, you have tea. I wouldn't want to go too long and risk the liquid becoming bitter. Hope this helped!
