Simple Kale Salad


Kale is a luxury good in Singapore. The only kind I can buy is organic kale imported from the USA, with a commensurate price tag. Because it is not very wallet- or earth-friendly, I buy it rarely. But the urge struck and so I wanted to make something that let the kale stand as the star of the dish.

This is a simple massaged kale salad. It's so simple you don't need a recipe for it. Chop up some kale leaves (ribs removed). Mix a vinaigrette with equal parts oil and vinegar. I used white whine vinegar this time. Then massage the kale with the dressing in a large bowl for about a minute by rubbing it in handfuls in your hands. Add some garnishes, like raisins plumped in hot water and toasted sunflower seeds. Voila, a simple kale salad that showcases the leafy green in all its glory.


Kale's luxury status in my house means that even the ribs are used. I popped them into a brine with some garlic and dill. After three or so days on the counter they will be lacto-fermented pickles.

Your salad looks delicious! Im not a kale fan but this was a tasty version for sure.
I love how much body kale has. It always make a good dish. Yours looks great. I made mine with spinach but would happily make it again with kale.

Kale is quite expensive here too. I have never had kale before and I was not a fan.

Oh, too bad! It takes getting used to. Massaging it is a key step as it's too tough to eat otherwise.
Oh, goodness, I didn't realize I was picking a recipe that was so expensive...yikes! Kale is not expensive here in the states, you can get it for economizing reasons...very inexpensive. Anyway, thanks for playing along this week despite the high price tag (I did think that sometimes pine nuts can be pricey so I was a little worried about that as well but the sunflower seeds are a great sub for those). We really liked this a lot. Kale will be a staple here from now on I think as we eat a lot of salads. i haven't tried cooking it yet, but I am thinking I will do that soon. Thanks for the tip on using the ribs, I like that idea a lot! :-)

I am happy to pay once in a while. :) One day when I live somewhere kale is cheap I will doubtless complain that bok choy is expensive. Human nature; eh. Thanks for picking this one--I loved it!
