Feta and Eggplant Meatballs

This is the tastiest meal I have ever made.


When I served these meatballs to my husband he took a picture before beginning. Then he took a bite, put his fork back down again, and moaned. "Ooonh, my!" Pause. "Wow, that is amazing." Pause. Gentle, low intake of breath. Then a little sigh.

I took a bite too, and had to agree. The meatballs were beefy brown on the outside and soft inside. Tiny diced, roasted eggplant made them moist. The crumbled feta lent a bit of saltiness and creaminess. As for supporting flavours, there was parsley, mint, garlic, and a tiny bit of lime zest. All in all, an incredible combination.


It's been a long time since my husband has reacted that way over dinner. He always gives his honest opinion and I often get thanked when the meal is tasty. But we had to agree that these meatballs are the tastiest meal I have ever made.

This was a great choice, Sarah, we really loved these little meatballs. The taste was delicious and although they were a little bit of work, it was easy work and I had it all done in a small amount of time. The flavors were amazing. I liked how the eggplant replaced almost half the meat and there were no egg or bread binders, saved a lot on calories/fat/etc. and gave it a nicer, cleaner taste and texture. I never would have tried this one on my own, so thanks for putting it out there. Your meatballs look fabulous!

Yes, I love the idea of making vegetables take the place of meat. I don't love meat anyway, so I'd rather eat more vegetables and still look like I'm serving meat. I'm really glad you liked them - I was a bit concerned about such an odd combination.

Oh - please do! They were so tasty. Anthony usually dislikes eggplant, but it just adds a nice moistness and a very subtle flavour in these meatballs.
What is beef mince?

Beef mince is just ground beef. I think that's an Australian/British vocabulary word!
