Asparagus with Balsamic Butter


Would it surprise you that I ate this whole dish of asparagus for lunch recently? It was just so easy and tasty! This "recipe" is more of a vegetable suggestion: grilled with balsamic butter. There are only three ingredients. (You can already name them.)

Making asparagus this way transforms them for the people who like their veggies with a sauce. I know a few folks who think plain vegetables are boring and prefer them with something extra. Balsamic butter is a very simple way to dress up "boring" vegetables.


Asparagus with Balsamic Butter
serves 2 as a side dish

handful of asparagus
2 T butter, plus a little more to grill or fry
1 T balsamic vinegar

Grill or pan fry the asparagus in a little butter. If you are using a grill pan, don't move the asparagus much to achieve charred marks.
Remove the asparagus when it's as soft as you like it.
Add the rest of the butter to the pan to melt it. Turn off the heat and add the balsamic vinegar.
Pour over the asparagus and serve.

I so wanted to make this. Love asparagus and it this is so easy. Alas I could not find any decent asparagus. Later.

I hope you do get to try it. It was supremely easy. You could use another vegetable besides asparagus, maybe try thick slices of courgette or peppers.
Butter (or just olive oil and slow roasting it) makes ALL vegetables delicious!

Oh yes! Roasting vegetables somehow seems like a too well hidden secret. Roasted cauliflower, for example, was a revelation.
Great choice...have made this a couple of times now and it is a favorite!
