Spinach with Sesame Dressing


If you are looking for a quick side dish, look no further! This is officially the recipe with the shortest cooking time on this entire blog.

Let's play a guessing game. Look at this beautiful spinach with sesame dressing, adapted from a recipe by Donna Hay. How long do you think the spinach is cooked for?


The recipe as written in Hay's book, Modern Classics 1, calls for the spinach to be blanched for 5 seconds! Yes, five seconds of total cooking time in this entire recipe! I looked away and think that I actually cooked it for closer to 10 seconds - oops.

I made this simple side dish as part of the blogger group, Wednesdays with Donna Hay. Have a look at Chaya's (at Bizzy Bakes) and Gaye's (at Laws of the Kitchen) as well.

I adapted the dressing recipe because I am living in temporary housing at the moment with a very simple kitchen. The dressing was meant to be smoothly blended but I just mixed together some toasted sesame seeds, vinegar, and soy sauce. Simple and delicious! And fast. The whole dish came together in literally one minute.

Yes, this was certainly a quick recipe and a good one. With regular spinach, it looks better than with baby spinach which is what I had. I am really happy that you have joined us.

That looks amazing! I love just barely cooked greens with dressing, and--thankfully--I'm bringing the boys around to loving it too.
I do value speed in the kitchen - I am usually cooking for just me after work, and I don't want to spend ages doing it. I am glad that you enjoyed this dish.

Hi Paula, it was just (approximately) 3 T soy sauce, 1 t sesame oil, 1 t vinegar, and 2 T sesame seeds.
I love your quick and healthful side dish. Love anything with sesame too. :) Thanks for sharing this lovely recipe.
Looks great...I feel badly that I haven't gotten it made yet as it was my pick and so easy...but we are in the midst of moving and my stuff is in boxes everywhere for the next couple of weeks...happy to see you made and liked it, though!

I finally got it made and this is the only recipe at DH that I have struggled with, I could not get the spinach to turn out like the photo in the book as it kept condensing into a wilted mess..lol. Finally got an acceptable version though. Yours looks lovely, and I can't imagine how you got that spinach to look so perfect! Good job!

I think the key to the photo was to use long stem spinach. I think with spinach leaves it would have been impossible! Your picture turned out lovely in the end - like a veggie fan!
