Fried Egg Accompaniment?

Now that I try not to eat wheat, what should I eat with my fried eggs?

I have been trying to avoid wheat and sugar recently, as I have become convinced that these are things that our bodies, and mine in particular, are not meant to process. I've started reading some paleo and primal websites and blogs. (Have a look at Mark's Daily Apple for one example.) But now I need to think of some ways to replace bread at breakfast.

Here's my fried egg, partially eaten from breakfast this morning. I was two thirds through, and all the lovely yolk was running over my plate. I love that smooth yolk, especially when it's bright yellowish orange like this one. This was a fresh free-range, organic egg. A piece of toast would have been perfect just about then to mop up the runny yolk.

What shall I use to replace the bread at breakfast? This morning I threw a handful of spinach on my place to soak up the yolk. But I am at a loss for other ideas.

What non-bread items do you eat with your eggs? Do you have any suggestions for wheat-free yolk-soaking foods?

You could try using alternative flours such as rye or spelt or chestnut to make breads that do not have wheat in them. Alternatively, you could have some fried potatoes or any potato, or even basmati rice. However, I would suggest a carbohydrate of some kind which is low GI. On the other hand, you could start having a no milk omelette for breakfast instead...

Hi Monica, lots of good ideas; thanks! I think some spelt flatbread might be nice. I really like the taste of spelt and rye. I don't think I have baked with chestnut flour before - have you? Does it taste like nuts?
I am now experimenting with alternative sugars - sweet leaf and agave nectar. Baking has suddenly become much more expensive. I am also experimenting with cutting sugars down but putting in sweet fruits instead. I had the most amazing low sugar fig and marscapone muffins the other day - YUM.

I have to admit that the sugar I put in the preserves/ jams is still the usual sugar, but since I am allowed a bit of jam on bread/toast (helps the sugar break down more slowly than on its own), I figured that was okay.

Hi again. :) I guess my main strategy at the moment is to just eat fewer sweet things. I figure it might be better to teach myself not to crave sweets. But being too strict about it causes me to fail miserably, so I think a bit of jam is a good compromise occasionally. I make oatmeal pancakes for breakfast all the time and about once a fortnight I have them with jam. My Grammie's cranberry jam is my favourite.
My oatmeal pancakes are a variation on this recipe from The Gracious Pantry.
Polenta! At least once a week I eat polenta with a fried egg on it (with salsa).

Brilliant idea! On the subject of polenta, I saw these polenta disks a couple of days ago. I think you could make them all at once and then take out a couple for breakfast in the morning.
I have also been doing some research on Paleo diets, too. It's interesting and makes sense but bagels and cream cheese and wheat toast and peanut butter are MISSED on my breakfast table! Please keep posting on your bread replacements!

Thanks, Lisa. I haven't gone strictly paleo yet.... So far I am just avoiding sugar and wheat. How have you been finding your change-over? By the way, I like your blog redesign - it's very comfortable on the eyes. :)
It's not paleo, but potatoes can work in a pinch. My favorite is rice, but I'm Asian and that's normal to me.

Actually, I can see how brown rice would be great here. And I always seem to have a box of leftover rice in the fridge. Thanks, Aileen. I guess living in Hong Kong has opened my mind to the possibility of rice at all times of day. Do you have a favourite way to eat rice at breakfast?
We'd warm up the rice by lightly frying it in the same pan with a fried egg. Still my favorite way to eat eggs now.

I am enjoying your site ... just discovered it via your comment on thekitchn.com! I adore the following foods with eggs: grape tomatoes sautéed in olive oil, smoked salmon, cooked green veggies (i.e., broccoli, asparagus, greens)

Hi KarenDF, thanks for visiting! I always learn so much from the community on The Kitchn. What a good idea to eat green veggies with a fried eggs - I think the textures would be just right together and you would feel so great afterwards. Eating lots of green stuff gives me a spring in my step. :)
