Meatless Meatballs


Now here's a unique way to make meatballs: with lentils and brown rice. These meatless meatballs are a good party snack or a dinner main dish with spaghetti. They are made more interesting with the addition of pesto, garlic, oregano, and paprika. They tasted scrumptious with a pesto and mayo dipping sauce.

I am always looking for new ideas and the Secret Recipe Club is a great place to get them. Each month I get assigned a blogger (in secret), make one of their recipes, and post on the same day as everyone else in the club. This month I was lucky to get assigned to The Lean Green Bean. Lindsay blogs about some great food and she also posts her weekly fitness activities. It's an inspiring mix of uncomplicated food and genuine talk. I have really enjoyed getting to know her.



I made these delicious meatless meatball following the recipe on The Lean Green Bean. They were easy and tasty. There's no need for me to post the recipe here, as I didn't adapt it much at all. Please hop over to her blog to see how easy they were.

Good question-- I like DIY meat alternatives (sometimes). It all comes down to the natural of the item though. Smokey processed soy masquerading as a hambuger or chicken nuggets, not so much. A lentil kefta or black bean burger, probably.

Hi groundcherry - thanks a lot for your visit and your comment. I agree with you - those textured, processed soy "meats" are not nice at all. But food that is really made from whole food ingredients appeals to me.

I decided not to publish the recipe here since it is Lindsay's intellectual property. I only publish recipes I create myself or recipes that are adapted from others to such a degree that there is something new and different about this. This avoids copyright issues, too, with print-published recipes.

Ah, in the US, recipes are not subject to copyright (unless they are written in a "unique" way, which means somehting like integrated into a narrative, not that you changed the ingredients) and so they are not legally considered to be intellectual property. Therefore, it's good manners (and ethical!) to credit/cite properly (or link) but you're not obligated to obtain permission to reprint legally. It can be frustrating as a writer, but it makes blogging easier!

Funny, I've never looked to see if that varies internationally...

how much do i love this idea?? i tried making meatless meatballs once with veggie ground round - not such a good idea, as it turns out. i'll give this a shot instead.

These do look awesome...as a vegan I try my best to stick to a whole-food plant-based diet and avoid using mock meats when possible, though I do add them from time to time as a "treat" for my husband and kids...I can totally live without them.
